Monday Eats: A Very Berry Fruity Sundae

Summer in the Northern Hemisphere can be very oppressive with high temperatures and smothering humidity.  I like a little relief with this Very Berry Fruity Sundae.  It's the result of lot's of fun and five days of testing and eating sundaes until I came up with this one.

  • Frozen yogurt vanilla ice cream
  • Raspberries
  • Black berries
  • Nectarines
  • Walnuts
  • Orange marmalade for the topping

In this dish, I added 5 scoops of the frozen yogurt vanilla ice cream. Fresh berries and nectarines are best.  And for the orange marmalade, I warmed it just a bit in the microwave to make it a little more fluid.

The surprise for me was using marmalade as an ice cream topping.  This delicious ingredient had been grossly underused by me.  It's a fabulous touch to a dessert.  In the words of my next door neighbor with whom I had shared this treat, "it's perfect!  The fresh berries, frozen yogurt and marmalade are a wonderful combination."

Try it!  Let me know what you think!  I would love to know.
